Description
Fenugreek is an annual plant belonging to the family Fabaceae, with leaves consisting of three small ovate to oblong leaflets. It is produced worldwide as a semiarid crop. Its leaves and seeds are common ingredients in dishes from the Indian subcontinent and have been used as a culinary ingredient since olden times. Fenugreek is used as a spice (seeds), a herb (dried or fresh leaves), and vegetable (sprouts, fresh leaves, and microgreens). The distinctive maple syrup aroma of fenugreek is because of a chemical compound called sotolon.
Sun-dried fenugreek leaves are generally known as Kasuri methi. It is used in various Indian dishes including curries and snacks, as it gives vegetables and other ingredients a delicious flavor.

Usage:
Fresh fenugreek leaves are an ingredient in some curries, such as with potatoes in cuisines of the Indian subcontinent to make “aloo methi” curry.
